Where are the vineyards?
What drew us most to the region was the anonymity of the area and the sea of vineyards throughout Galicia that produce surprisingly wonderful wines little known outside of Spain, but on par with the better known Riojas. Our property lies in the highest region of Galicia, at an elevation of nearly 1000meters (3000 ft), much higher than most of the region’s vineyards. As such, we were intrigued with the idea of experimenting with more high altitude varieties, similar to a Pinot Noir or Chardonnay, producing darker, deeper colors, elegant and fresh with great structure. The lands already have a natural slope, perfect to protect from the cold winds while maximizing sunlight and drainage. To begin experimenting with different grapes, we are starting small with just a few acres of local red and white varieties purchased from a nearby winery. These vines are nearly ready to be planted and everyone is waiting eagerly for the big day. While it can take five to six years before we have viable grape production from our vineyards, the idea is to begin setting up the actual processing equipment within the next year and start ‘learning’ the art of winemaking by purchasing the grapes and leveraging local experts from nearby wineries. We will likely wind up with a few vintages of vinegar along the way, but that is all part of the experience.
